Coriander Lime Cauliflower Rice

Cauliflower rice is the new low-carb, grain-free, keto-friendly fad that's healthy and delicious, and also a really convincing replacement for rice. It's basically cauliflower camouflaged as rice (sneaky!) - with the same taste and consistency?? SHUT THE FRONT DOOR!

We've been trying to reduce our rice intake lately and have been eating quinoa as a replacement - it's been heavy on the pockets - so I decided to give this a try since $1.80 gives you a full head of cauliflower that's enough for 4 cups of "rice". Ok I'm sold!

There's 3 ways to get cauliflower rice - (1) Buy already grated cauliflower that's readily available in the frozen section of your supermarket, (2) Use a food processor and grater blade to blitz it into rice or (3) Use a box grater just as you would cheese! I used the third option just because I do not own a food processor. It gets a little bit messy so grate over a large serving bowl to avoid the mess.

Recipe serves 4 people. 5 mins prep time, total cook time approximately 15 mins.


1 full head of cauliflower

2 cloves garlic, chopped

1 large white onion, chopped

1 cup coriander, chopped

1 teaspoon cumin

1 tablespoon olive oil

2 limes, juiced

Salt & pepper

For the garnish

1 cup spring onion, chopped

Limes, sliced thinly



1. Cut cauliflower into four and gently grate down the whole cauliflower until you get "rice". Watch out for your fingers when using a box grater!

2. In a pan over medium heat, add oil, garlic and onions. Stir fry until garlic is golden brown and onions are translucent.

3. Add cauliflower rice and cumin and fry until fragrant and cauliflower is cooked through. It should be slightly tart and crunchy, and not mushy.

4. Turn off heat and gently stir in coriander, spring onion and lime juice. Salt & pepper to taste.

5. Serve warm as a side, or a light summery main dish!



1. The fresh and zesty flavor of this dish lends itself perfectly when paired with a more flavorful main such as Thai Baked Salmon or Spicy Stuffed Squids.

2. Easily turn this dish into a complete main dish by adding chopped prawns or chicken right after the garlic and onions are browned. Season with whatever you like, and mix in the cauliflower rice. This would basically give you cauliflower fried rice!

3. Do not overcook the cauliflower or it will turn into a bowl of mush. Remember, the texture is supposed to mimic rice therefore it should still be a little crunchy and tart - I'd say cook it 3/4 ways through.
